While I am most frequently a clean-eating, workout-loving, health nut, sometimes there is no better cure for a stress laden mommy than a warm slice of deliciousness. Last week my momma found an old recipe for lemon pound cake. It was torn from a magazine. Who knows which one. She thought it looked good, so she ripped it out and stuck it into her recipe collection. When she found it last week she decided to bake it. Daddy liked it so much! Momma said it was the solution to World Peace. Heehee! I was curious enough to decide to bake some World Peace cake for us.
Here’s the recipe in case you want to make it for yourself…
3/4 cup butter, softened
1 1/2 cups sugar
1 tablespoon lemon zest
1 tablespoon lemon juice
3/4 cup vanilla yogurt (we used plain Greek yogurt and a teaspoon of vanilla extract)
2 1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup sugar
1/4 cup fresh lemon juice
Preheat oven to 350 degrees. Lightly grease and flour a 9×5 inch loaf pan, set aside.
Stir together lemon zest, juice, and yogurt in a separate bowl.
Sift together flour, baking powder, and salt in a third bowl; add to butter mixture, alternately with yogurt mixture. Beat at low speed just until blended after each addition. Pour batter into prepared pan.
Bake at 350 for 1 hour to 1 hour 20 minutes or until a wooden pick inserted in center comes out clean.
Cool. Remove from pan. Drizzle with Lemon Glaze.
To make the Lemon Glaze: Place sugar and fresh lemon juice in a small saucepan over medium heat, and bring to a low boil. Cook, stirring constantly, about 7 to 10 minutes or until sugar has dissolved and mixture has thickened slightly. Cool about 10 minutes…seriously, let it cool for 10 minutes. It will be too runny if you don’t!
